BAKED CHICKEN JAMBALAYA - Serves 4 Syn Free 8 skinless chicken thighs or 4 skinless chicken breasts 1 large onion, finely chopped 1 carrot, peeled and finely chopped 1 tsp. smoked paprika 1 red pepper, deseeded and finely chopped 1 fat clove of garlic, crushed 175g easy-cook, long-grain rice 400g can chopped tomatoes 450ml hot chicken stock 125g bacon, all visible fat removed and bacon chopped into small pieces Heat the oven to 170C/Gas 5. Season the chicken pieces with salt and black pepper. Spray a flame-proof casserole dish well with Frylight and fry the chicken pieces until brown all over. Add the onion and carrot and fry for 5 minutes. Stir in the paprika, red pepper, garlic and rice and cook, stirring, for two minutes. Add the tomatoes, stock and bacon pieces. Bring to the boil and cover with a lid or foil. Cook in the oven for 45 minutes, until the chicken is tender and the rice fluffs up easily with a fork. This is also good with a tsp. of dried thyme stirred through and some spring onions snipped in, just before baking. This is based on a recipe from the Woman and Home magazine. Cooked this lovely recipe tonight - really tasty and using only one pot's a bonus this'll become a regular here - thx again Kathy xx

Kathy - I made the spiced chicken nuggets on page 6 today - I don't have a food processor - so I just add water to the garlic/dry ingredients to make a paste and coated the chicken thighs & followed the recipe - they went down v well here - thank you again! xx

A DIFFERENT WAY TO COOK SPROUTS WITH BACON & LEEKS
Not so much a recipe - just an idea:
Fry sprouts which have been cut into quarters, bacon pieces and chopped leeks until cooked - add 14 cashew nuts (HEB) towards the end - just to make them warm. Really lovely with a baked potato - makes a tasty lunch or a veg accompaniment to a main meal - might do it myself on Xmas day!

CRISPY FRIES - Serves 3 if using 3 potatoes 2 Syns per serving - if using 1 tbsp. olive oil www.layersofhappiness.com/extra-crispy-oven-baked-french-fries/These are from the layers of happiness site and, as I can never make crisp fries/chips, I shall definitely be trying these out. I know they contain Syns but I find, that many days, I don't use anywhere near my full amount of Syns so I wouldn't have to worry about making these from time to time. Thanks for the sprouts recipe, Linda. Sounds delicious!

You're welcome - just had a thought about making 'Tony's chips' - a girl in class was saying the same as you - followed the recipe several without any luck - one of the girls said to make sure that if the raw chips weren't breaking up and looking 'fluffy' at the end of the recommended cooking time - to cook them until they do. I find that some potatoes - even ones that say they're the 'fluffy' type - take make longer in the microwaving process.
I thought of you when that came up in class - I think that shd do the trick and they're worth pesevering for! Perhaps try them one weekend when might have spare time? Yes I'll def be making that sprout delight again! xx

This one pan recipe is quick, easy and tasty and includes speed - what's not to like? I've not included any weights/quantities as this recipe can be amended for the amount required.
INGREDIENTS
Sprouts - washed and quartered (Speed) Onions, chopped (Speed) Bacon all fat removed, chopped (Free) Garlic - crushed (Free) Seasoning (Free) Optional: Cashews, almonds or peanuts which will need to be 'synned'of course!
Fry the sprouts, onions, bacon and garlic in frylight or oil from your HEB allowance, until everything is cooked and beginning to turn brown. Stir the nuts into the veg, if using, for about a minute. Season to taste. Enjoy!!

CHUBBY CUBS OVERNIGHT CHOCOLATE AND ORANGE OATS Serves 1
3.5 Syns but worth it!
to make cubby’s chocolate orange overnight oats, you’ll need: •35g of plain oats •50g of mandarin segments in juice – 1 syn •Muller chocolate orange with dark chocolate sprinkles (syn free) •10g of milk chocolate chips – it’s 6 syns for 25g, so I said it was 2.5 syns for 10g – easy!
Layer all the ingredients, finishing with the chocolate chips (or you could add those just before eating) and place in the fridge overnight. Next morning - enjoy!!

CAJUN SAUSAGE AND BAKED BEAN POT - Serves 4 Syn Free Pack of 8 Syn Free SW sausages 1 large red onion, sliced 400g can chopped tomatoes 400g can baked beans 4 tsp Schwartz Perfect Shake Herb + Spice Blend Fry the sausages in a non-stick pan until browned. Add the onion and fry until softened - best started off in the microwave first. Drain any excess oil before adding the remaining ingredients and bringing to the boil. Reduce the heat and simmer for 10 minutes. Good as a quick week day meal, served with jacket potatoes. Kathy - I'll be cooking this tonight - will report back Thx again for providing us with tasty 'legal' recipes!! xx
