LUSCIOUS LEMON MOUSSE
LUSCIOUS LEMON MOUSSE - Syn Free
Thought I might make this lemon mousse whilst I'm on Half Term holiday.
Grated rind and juice of 2 lemons 8 level tbsp. Canderel or equivalent 3 eggs, separated 2 tbsp. hot water 1 sachet gelatine 6oz. Fat Free Fromage Frais 1 egg white Pinch of salt or Cream of Tartar
Put the grated lemon rind and juice in a bowl with the sweetener and the egg yolks. Stand over a pan of simmering water and whisk until lemon in colour (10-15 minutes). Pour the hot water into a basin and sprinkle the gelatine over. Stand in a pan of simmering water until the gelatine has dissolved. Stir the dissolved gelatine into the lemon custard mix and leave until beginning to set. Fold the Fromage Frais into the setting lemon mixture. Whisk the 4 egg whites with the salt or Cream of Tartar until peaking and fold the setting lemon mixture in with a metal spoon. Pour into a dish and refrigerate for 2-3 hours.

TASTY VERY LOW SYN PUD - 2 or 4.5 syns - you decide!
A quick and easy dessert recipe:
Half a tub of syn free vanilla yogurt Optional - crushed meringue nest 2.5 syns Half a tub of syn free flavoured Skyr (Lidl's are free - blueberry, raspberry & strawberry flavoured at my local store) 11g of low cal drink chocolate 2 syns Optional - complementary chopped/sliced fresh fruit/s
If using fruit/s place it into a small dessert dish or glass sundae dish. Then spoon a layer of the yogurt on top then sprinkle half the crushed meringue on top, repeat with the skyr and the rest of the meringue - then sprinkle the final layer with the choc options.
If you like this - you could try many different flavour yogurt combinations and swap the meringue layer for your favourite low cal biscuits etc - I've topped this pud with chopped choc fingers - 2 syns each.

Thx Kathy - ooh I fancy that cheesy pasta recipe and will enjoy finding the offensive bits too will let you know how I get on! The lemon pud sounds good too - I think it's efficent not lazy to copy and paste the recipes xx
