At a loss for this week!!! Debating making my own veggie burgers but not sure whether to do with Quorn mince or pulses etc. Any one got any good recipes?

At slimming class we were told about doing this with swede.
The timings will depend on the size of the swede. 10-30 mins
Put the swede in the microwave. DO NOT cut it or prick it at all.
Turn mwave on and when the swede WHISTLES, yes whistles, it should be done. What happens is that it cooks the inside of the skin and apparently you can spoon it out like mash.

I tried that - although it's less prep - it's quicker to cut it up and boil it if the swede is too big lol! It does taste nice though!

I tried butternut noodles and courgetti spaghetti in the last two days.
They tasted a bit funny to me and I'm 100% sure they'd be nicer if I used my own spiralizer. Purely because they'd be fresher!!

I'm with you on that - I tried the butternut squash ones last week. I think it's the chemicals they put in them to keep them fresh

Had though about buying a spiralizer but understand they are quite expensive and don`t know whether I would use it very often.

I've got one and it's rubbish. Saw a new one for £28 today but I just can't justify the money!

I think part of the trouble is there are different kinds of spiralizer. My brother had a good one, trouble is it was big and I didn`t think I would use one. He passed it on to his DIL.

Mines a giant plastic thing. The one I nearly bought is smaller but metal so I think it would be more sturdy. Still can't justify the money though so I didn't get it lol Got a couple of meals on the menu this week that I haven't had before so will be giving them a go. Also made chocolate jelly to stop myself feeling deprived at Easter..

I tried roasted sweet potato for the first time yesterday! I've only ever had it as chips or in soup before!
