Syn free lemon curd.
Ingredients
1 lemon 2 eggs 3 tbsp sweetener 60g fromage frais
Instructions
Grate the lemon rind and squeeze out juice Place sweetener and rind in a bowl Whisk eggs and lemon juice and pour over sweetener and rind Place the bowl over a saucepan of simmering water Keep stirring all the time until thickened Do not overcook or you will get scrambled egg Add fromage frais and whisk until smooth Chill in the fridge and use within a week
Add more fromage frais for a lovely lemon dessert
I have not tried this but I am told it is good. Found it on an old site from two years ago.
