I made this last night and it was delicious.
Serves 4 large portions. 3.5 syns per portion
2x fresh cauliflowers 200g chorizo - 13 syns 3 chicken breasts Stock Onion Mushrooms
Method Blitz or grate the cauliflower until it resembles rice. Keep to one side
Sauté the onions and then add the mushrooms, chorizo and chicken. Cook until the chicken is cooked through. Add the cauliflower and coat with the mixture. Add approx 200-300mls of stock and simmer for 10-15 min. The cauliflower doesn't go mushy and the taste is amazing.
