I took some to work this morning for breakfast. I lost the spares to my colleagues Ingredients 6 Eggs 6 SW sausages 10 Smoked bacon medallions Method Put the bacon medallions in the oven @ 180oC / 350f / gas 4 for about 10 minuets untill slightly crispy. Then leave to cool. Boil the eggs for 10 mins ( Until hard in the middle ) Take the bacon and cut into chunks then blits in the blender until looks like bread crumbs. Take the shell off the eggs and dry with Kitchen roll. Wrap the sausage around the egg then roll in the bacon bits. Bake in the over for 15 - 20 mins. Nice hot or cold.

I make these but don't cook the bacon first I just wrap it around raw and pop in the oven. I'll have to try your way as it sounds nicer. Such a filling lunch on the run

Morning. I just an update. I swapped these from my 2 Weetabix in the morning at work.... result 2 lb loss. Off to Iceland today as I am off work to stock up.
The bacon pieces are also nice as a salad topping. I so hope you enjoy it. I will post pics of my next batch. xx
I use to wrap it in a whole bacon medallion but I wanted to make them look more normal to reduce the questions at work. They are all skinny and do not understand the hard required to lose weight. So anything that looks different means questions and I am getting a little sick of it.
