Someone posted this on minis a while back, saying a friend of theirs had made it when they didn;t have the right ingredients for chickpea loaf. It's really easy and very filling. And Free!
115g rice (dry weight)
can of baked beans, drained (make sure they're drained really well)
1 onion, chopped
1 red pepper, chopped (I use the roasted red peppers from a jar, free if in water not oil)
3 eggs, beaten
curry powder/chilli powder/other spices to taste
Cook rice as per packet instructions. Cook onion/peppers in Frylight till soft. Put rice, beans, veg, eggs and spices in a bowl and mix well. Add salt/pepper to taste. Pour into loaf tin and bake at gas 5 for about 30-35 minutes (will depend on your oven).
Leave to cool a bit before turning out. I use a silicone loaf tin, if using a normal one I would either liberally Frylight it or use baking parchment. Personally I think it is much better cold - I usually have some for tea and then use the rest for lunches over the next couple of days.
You could use other veg according to what you've got lying about.

I saw the name of the recipe and was surprised because I remember exactly seeing it before. I just have all the ingredients, and I'm sure I'll try making it as soon as I can. Expect a review with photos.
