3 medium sweet potatoes 3 small onions 2 cloves of garlic 3 carrots 1 medium white potato Chicken stock pot 1/4tsp dried chilli flakes 1/2 tsp ground cumin Fry light
I sprayed a saucepan with fry light ( I used the butter one as I love it ) the fried off the garlic and onions to soften. Then added the diced veg and the spices and sauteed for a few mins. Then covered in boiling water and added the stock pot and simmered for 25 mins with the lid on. Then blended. Needed a tiny bit more hot water to thin out a little. Was really tasty and filling.
