Serves 4
Seasoning mix: 1/2 tsp chilli powder 1 tsp paprika 1/2 tsp salt 1/2 tsp cumin 1/2 tsp cayenne chilli pepper 1/2 tsp garlic powder 1/2 tsp sweetener 1 tsp dried oregano
– mix all the seasoning ingredients together and leave aside
– 600 less than 5% fat minced beef – 2 small red onions, finely chopped – 1 red pepper, finely chopped – 1 tin chopped tomatoes – 1 tbsp Worcestershire sauce – 1 beef stock cube or stock pot
– 4 large potatoes, chipped -120g red cheddar, grated
– preheat oven to 200, line a tin with baking paper, lay chips out and spray with frylight, bake for 35-40 mins, turning half way through and re-spray, until golden and crisp (or use air fryer) – fry the onion and pepper in frylight until softened – add the beef and fry until lightly browned – add spice mix and stir well, add Worchestershire sauce and crumble in beef stock cube or pot – add the tin of tomatoes and stir well, adding a little water if sauce is looking to dry – simmer for 20 mins
Taco Sauce
– 6 tablespoons fat free natural yoghurt or fromage frais – 1/2 tablespoons tomato purée – 1/2 tsp cayenne chilli pepper – 1 tsp minced garlic – 3-4 tablespoons water
– mix all sauce ingredients well until Smooth and combined, add more or less water depending on your own taste
Assembly – take a bowl (or a foil tray if you want to feel authentic) – layer chips first, then mince sauce, then garlic sauce, then cheese
