Hi Kathy, you poor thing, having to retype it all, I'm dreading the same lol. Well done hun, you've opened up so many threads since coming on here. Your doing a great job. And Doreen, bless her, knows how rubbish I am on the computer so she started the original index for me too!
At the moment, Darren has created a FB page which, eventually, should have all the other recipes on. He's trying to Copy and Paste them all from Minis onto FB. He's just hoping the recipe threads on Minis stay active while he undertakes this laborious task! In the meantime, I know he'd really appreciate all the Likes he can get, as a show of support for all his hard work so it'd be great if you could just pop over and give him a Like. He's called the page he's created, Kathy's Minimum Fuss Recipes.

LAMB STEW - Serves 4
Syn Free
350-450g lean lamb, cut into chunks 12 shallots, halved or 1 large onion, thinly sliced 3 cloves of garlic, crushed 3 medium carrots, chopped 400g can chopped tomatoes 1 lamb stock cube 400g can flageolet beans, rinsed and drained
Spray a large, non-stick pan well with Frylight and cook the shallots/onion until beginning to soften. Stir in the lamb, carrots, tomatoes and crumbled stock cube. Refill the tomato can with cold water and add to the pan. Bring to the boil and simmer for 25 minutes, stirring occasionally. Stir in the beans and return to simmer for 5 minutes, until hot. Season to taste.
Lovely served with mash and seasonal veg. Good also with a Synned glass of red wine added.

SPEEDY MASALA MINCE - Serves 4
Syn Free
450g 5% fat minced beef 1 onion, finely chopped 2 cloves of garlic, crushed 1 x 2.5cm piece of root ginger, peeled and finely chopped 400g can chopped tomatoes 1-2 green chillies, deseeded and finely chopped 2 tsp. garam masala 2 handfuls of freshly chopped coriander
Heat a large, non-stick frying pan until hot and brown off the mince, before adding in the onion, garlic and ginger and cooking for about 7 minutes. Reduce the heat and add the tomatoes, chillies, garam masala, half the coriander, some black pepper and a pinch of salt. Bring to the boil, reduce the heat down and simmer, uncovered for 30 minutes, stirring occasionally. Add in some water if it's getting too dry. Garnish with the remaining coriander and serve with Basmati rice and, maybe some Synned naan bread.

BAKED STICKY CHOPS - Serves 6
Just under 2 Syns per portion
6 lean loin chops, all visible fat removed
For the marinade:
2 tbsp. white wine vinegar Half a tsp. ground nutmeg 2 cloves of garlic, crushed 1 level tbsp. light brown sugar - 3 Syns 4 level tbsp. reduced sugar plum jam - 4 Syns 5 level tbsp. reduced salt + sugar tomato ketchup - 2.5 Syns 1 level tbsp. sweet chilli sauce - 1.5 Syns
1 tbsp. reduced salt soy sauce - optional
Mix all the marinade ingredients together. Add the chops and coat in the mixture. Cover and chill in the fridge for 2 hours but, ideally, overnight. Pre-heat the oven to 200C/Gas 6. Place the chops on a metal rack over a roasting tin. Bake for 35-40 minutes, turning once. They can also be cooked under a pre-heated grill for about 16 minutes, turning occasionally. Check they are thoroughly cooked through. Good served with SW wedges or savoury rice and a side salad.

RATATOUILLE FISH BAKE - Serves 4
Syn Free, if using cheese as part HEX's
500g new potatoes, in their skins and sliced 1 red onion, finely chopped 1 aubergine, sliced - optional 1 red pepper, deseeded and finely diced 1 courgette, diced 4 cloves of garlic, crushed 400g can chopped tomatoes 4 x 150g white fish fillets 40g reduced-fat mature Cheddar, grated
Heat the oven to 200C/Gas 6. Cook the potato slices until just tender. Drain. Meanwhile, spray a large, non-stick frying pan well with Frylight. Cook the onion, aubergine, pepper, courgette and garlic until soft. Add the tomatoes and heat through. Put half the veg mixture into a baking dish. Layer the fish, then the remaining veg. Top with the potato slices. Spray with Frylight and then sprinkle with the cheese. Bake for approx. 25 minutes or until golden and cooked through.

BEAN AND SAUSAGE CASSEROLE - Serves 4
Syn Free, if using SW sausages or 2 Syns per serving, if using BGTY sausages or equivalent
8 Syn Free sausages OR 8 BGTY sausages - 8 Syns 1 onion, finely chopped 400g can cannellini beans, drained and rinsed 400g can chopped tomatoes 120g cherry tomatoes, halved 1 tbsp. balsamic vinegar Pinch of sweetener, to taste 4 tbsp. torn basil leaves
Brown the sausages under the grill. Meanwhile, spray a non-stick pan well with Frylight and cook the onion until softening. Add the beans and canned tomatoes. Bring to the boil and reduce the heat. Add the halved cherry tomatoes, browned sausages and the balsamic vinegar. Simmer for about 15 minutes, or until the sauce has thickened and the sausages have thoroughly cooked through. Stir in the basil leaves.
Lovely served with mash or baked potatoes.

TOMATO AND CHILLI SALSA - Serves 4
1.5 Syns per serving
350g cherry tomatoes, halved 1 long red chilli Half tsp. smoked paprika 1 tbsp. extra-virgin olive oil
Line a grill pan with foil, then add the tomatoes and chilli and grill under a high heat for 8-10 minutes, until the tomatoes start to wrinkle. Remove from the grill and leave until cool enough to handle. Cut the chilli in half. Put the tomatoes and chilli in a food processor with the smoked paprika and the olive oil, then blend briefly to form a chunky texture. Leave to cool completely, then cover and chill until ready to serve.
For a milder salsa, halve the chilli and remove the seeds before grilling.
