Unfortunately, I won't be able to re-type them all as, apparently, there were over a thousand on my thread on Mini's! Didn't realise, until Darren offered to do that amazing index for me! And Doreen, bless her, knows how rubbish I am on the computer so she started the original index for me too!
At the moment, Darren has created a FB page which, eventually, should have all the other recipes on. He's trying to Copy and Paste them all from Minis onto FB. He's just hoping the recipe threads on Minis stay active while he undertakes this laborious task! In the meantime, I know he'd really appreciate all the Likes he can get, as a show of support for all his hard work so it'd be great if you could just pop over and give him a Like. He's called the page he's created, Kathy's Minimum Fuss Recipes.

SAUSAGE AND LEEK BAKE - Serves 4
Syn Free, if using SW sausages, otherwise 2 Syns per serving, if using the cheese as part HEX's
8 sausages - either SW or something like BGTY - 8 Syns 4 leeks, washed and thinly sliced 4 carrots, thinly sliced 2 cloves of garlic, crushed 2 medium onions, finely chopped 50g mature Cheddar, grated 4 medium potatoes, peeled and sliced 1 beef stock cube
Pre-heat the oven to 200C/Gas 6. Cut the sausages into quarters and place in an ovenproof dish with one of the finely chopped onions and the garlic. Season with a pinch of salt and some black pepper. Spray well with Frylight and put into the oven until cooked through. Drain off any excess liquid. Once the sausages are cooking, put the sliced potato and the other finely chopped onion into a pan on the hob, cover with water and bring to the boil. Once boiled for 5 minutes, turn off the heat and leave to stand in the water. Boil the leeks and carrots in another pan and, once reaching boiling point, turn the heat off, drain and place them on top of the sausages, along with the crushed stock cube. Carefully pour 2-3 ladles of onion water from the potato pan over the sausages (enough to just cover the vegetables). Place the sliced potatoes on top of the vegetables and sprinkle the grated cheese over. Bake for about 20 minutes, until the cheese has crisped up and the potato slices are tender.
I haven't made this recipe but it has very good reviews.

And I don't know how long I will have access to the mins thread. I may just do a few at a time and see how I go. I'm currently at home waiting for a date for my op, so I have some spare time. So glad you found us, CrazyFool/Seabreeze! Definitely prefer your new name!! Thanks for your lovely comment! I know, Darren is such a star. Feel really sorry for him. He originally PM'd me to see if I'd mind him adding a clickable index to my thread, over on Minis. Mind?!!!! I nearly bit his hand off!! (Syns?)He told me he'd already done an index of the recipes for himself and he could do the same thing on Minis. He did such a fantastic job and now all his hard work is in vain. That's why I'm hoping, after Copying and Pasting ALL the recipes, his FB page is a success for him. Then, of course, we mustn't forget lovely Nanny Doreen! She was the first to offer her services to me, in creating an index and I still use (or did!) hers, alongside Darren's when I'm doing my weekly shopping list. So glad she's found her way here too. TOMATO AND CHORIZO RICE - Serves 4
Approx. 3 Syns per serving, if using the olives
200g Sainsbury's diced chorizo - 10 Syns 1 onion, halved and thinly sliced 2 cloves of garlic, finely chopped or crushed 1 tsp. smoked paprika 250g Basmati rice 500ml chicken stock 2 roasted peppers, in brine, chopped 395g cherry tomatoes, either fresh and halved or canned (without the liquid) 50g pitted green olives - 3 Syns but can, obviously, be omitted
Heat a large, non-stick frying pan over a medium/high heat. Add the chorizo and cook until the oils run and it begins to crisp up. Tip in the onion and garlic and cook for a few minutes. Stir in the paprika and rice, mix well so the grains are coated with chorizo oil, then pour in the hot stock. Add the peppers and the cherry tomatoes (if using fresh). Stir everything gently together, cover the pan and cook for 5 minutes. If using canned cherry tomatoes, stir them in now, along with the olives, if using. Cook for a further 10 minutes or until the rice is tender and the liquid has been absorbed.
Lovely on its own or as a side dish. Good sprinkled with HEX grated cheese.
