2 medium sweet potatoes, cubed.
Bunch of spring/salad onions.
1tsp easy garlic (or a clove of garlic).
1/2tsp of easy chilli (or 1/2tsp of crushed chilli).
1 tin of salmon.
Salt and pepper to taste.
1 egg, beaten.
2 slices of a 400g wholemeal loaf (HexB).
Bring a pan of water to the boil, add sweet potato, bring back to the boil and leave for 4-5 mins, or until the potato is soft.
Leave the potatoes to cool, and meanwhile mix the rest of the ingredients in a mixing bowl.
Turn oven on to preheat at 200 degrees Celsius.
When the potatoes have cooled slightly, mash and then add to the other ingredients.
Give all the ingredients a good mix and make sure they are all incorporated.
In a blender, or using a hand blender, make breadcrumbs with the two slices of bread, then lay out the breadcrumbs on a large plate (or kitchen surface if you don't mind the mess).
Shape the sweet potato/salmon mix into patty shapes (or any size/shape you like, as you don't need to worry about distributing syns equally or anything).
Dip the patties in the beaten egg, or use a pastry brush, then roll them in the breadcrumbs until fully coated.
Spray an oven tin or two with fry light, add the fishcakes and spray again.
Cook for 15-20 minutes, turning once, or until the breadcrumbs have gone golden.
Just made these for lunch and they were absolutely delicious! I served them with some salad, SW chips and some sweet chilli sauce (1.5 syns per tbsp).

I'll try these too, but I may try using dry Smash for the coating instead of the bread. Otherwise I'd miss my supper sandwich way too much! Thanks for the recipe Caz, much appreciated
